Sumac is the lemony red berry people used before lemons. Ours is wildcrafted in Maine, and it's loaded with polyphenols and natural malic acid and it gives this tonic its tang and its ruby color.
We built Sumac & Pine Needle Tonic around it for daily use: bright, tart, and zero heat. No habaneros. No horseradish. No bracing yourself. It's the tonic for everyone who loves the idea of Fire Tonic and can't take the fire.
Three more plants make the sumac work harder. Rosehips bring vitamin C, carotenoids, and a fruity tartness. White pine needle, the same needle brewed for Jacques Cartier's scurvy-stricken crew in 1536, brings vitamin C, shikimic acid, and a soft, green, forest finish. Elderflower brings rutin, quercetin and a light, honeyed floral note.
All of it is steeped in raw apple cider vinegar, because acid pulls vitamin C, minerals, and polyphenols out of the plants and keeps them stable. Wildflower honey rounds it out. The result is a ruby-red tonic in clear glass that tastes like lemonade from the forest.
